San Antonio’s nationally recognized Pharm Table has retained Scott Ota, one of the city’s most celebrated sommeliers, to lead its new wine program.
As resident sommelier, Ota brings nearly two decades of expertise to the forward-thinking Southtown restaurant, according to its owners. Previously, he ran High Street Wine Co. at the Pearl. Additionally, he was recognized by Wines & Spirits Magazine as one of America’s best new sommeliers and by Food and Wine Magazine as one of its 2018 Tastemakers to revolutionize the business.
In her new role, Ota has compiled a new producer-focused wine list for Pharm Table with plenty of sustainable, biodynamic and organic options. He is also responsible for sourcing from growers who align with the restaurant’s philosophy of strong, sustainable and regenerative farming practices.
“When choosing wines, I look at everything – the history, the terroir, the producers, the guests… a bit like [Pharm Table chef Elizabeth Johnson] look at the whole picture when planning your menu,” Ota said in a statement. “We want to create an exceptional dining experience.”
Johnson’s Ayurvedic, forward-thinking approach to anti-inflammatory cuisine emphasizes eating according to your body type. His approach has been featured on 60 minutes and PBS Samantha Brown’s Places to Love. This year, the chef also earned a spot in a series of esteemed James Beard Foundation dinners.
To encourage food and wine pairings, many of Ota’s hand-selected options are available in three and five ounces to suit menu items.
Ota is also hosting new “Wine Wednesdays” tasting events, which will feature wines paired with small bites. Each session revolves around a different theme, such as a specific grape variety or broader categories such as women winemakers.
The next two Wine Wednesdays will take place on Wednesday September 28 and Wednesday October 19. $45 tickets for the late September event are available now at Pharm Table website.
