Sprawling Finnish-inspired restaurant opens in Nordic spa paradise near Toronto

A Nordic spa paradise just opened near Toronto recently, and now it will soon include a splashy Finnish-inspired restaurant.

Vetta Nordic Spa finally opened its doors earlier this year after teasing for months.

Located in Oro-Medonte in Horseshoe Valley, the spa with several saunas and pools and a sleek design already houses a café-bar serving sandwiches and salads as well as a bistro called Savu. The bistro already has a Finnish air with cheese plates, charcuterie and smorrebrod.

The new restaurant opening in the spa is called Koivu, and while it’s technically already open, it only serves a seasonal snack menu on Saturdays and Sundays from 12 p.m. to 4 p.m. before its official launch. Koivu soft opened at the end of April.

Currently, the snack menu is a selection of $4 items: smoked salmon with marinated red onion and cream on a rye crisp, cabbage roll, sausage skewer with apples and sage, dumpling Finnish meat and sumac popcorn. There are also juices, kombucha, and mocktails like non-alcoholic Caesars and G&Ts.

Vetta is currently recruiting for a ton of catering positions. If you are hired, you actually get unlimited free access to the spa.

According to a hiring post in the Food and Wine Industry Navigator group on Facebook, Koivu’s menu should consist of “locally sourced fresh whole foods” and the restaurant will be Finnish-inspired.
