PPX Hospitality Brands and Alto-Shaam Partner in Mock Restaurant Test

Legal Sea Foods and Smith & Wollensky, two iconic restaurant groups owned by PPX Hospitality Brands, tested Alto-Shaam’s latest Converge® Multi-Cooking Ovens in a simulated restaurant experience that fed more than 400 Alto employees -Shaam.

Culinary leadership from both restaurants has transformed Alto-Shaam’s Culinary Institute into a full restaurant kitchen at its makers’ global headquarters in Menomonee Falls, Wisconsin.

“At PPX, we are always on the lookout for culinary solutions and tools that make our kitchens more productive and efficient while maintaining the same level of quality that we are also committed to,” said Culinary Director Matt King. “Our partners at Alto-Shaam respect and live by this same philosophy. We were blown away by the possibilities offered by this new technology, and the collaboration was a fantastic experience for my team. »

Alto-Shaam employees enjoyed two different dining experiences: a mock restaurant order and a buffet-style lunch. The team of chefs cooked dishes from Legal Sea Foods and Smith & Wollensky.

Dishes included plated dishes, such as Mexican street cod, grilled prawns, organic Scottish salmon and grilled swordfish. Top-notch appetizers were also served, ranging from lobster macaroni and cheese cooked in a lobster shell to a 30-day dry-aged American Wagyu tomahawk steak.

“In my more than 30 years at Alto-Shaam, I have never experienced partner testing at this level,” said Steve Maahs, President and COO of Alto-Shaam. . “I came away in awe watching these restaurant chefs recreate their high-end dining experience for our employees, while demonstrating the versatility of our ovens.”

Alto-Shaam’s Converge Multi-Cooking Ovens were at the heart of food production. Ovens feature up to three independent chambers in a vent-free space, allowing steaming, baking, broiling and air frying at exactly the same time, in the same oven with the highest quality . Simultaneous use of a variety of cooking applications is possible thanks to the combination of controlled humidity with Alto-Shaam’s pioneering Structured Air Technology®, which provides vertical air for precise cooking and homogeneous.

“Feeding the Alto-Shaam team in such large numbers was incredibly generous and beyond,” Maahs said. “It really demonstrates the strong partnership and trust that exists between everyone involved.”

Partners included E3 Commercial Kitchen Solutions, Alto-Shaam’s manufacturers’ representative in New England, and TriMark United East, the Northeast’s largest distributor offering commercial kitchen equipment and supplies to restaurants and national chains. .

“It was the most unique event I’ve ever attended,” said E3 Lead Partner Ken Lawler. “It was a taste of the high level of execution that happens in the kitchens of PPX Hospitality Brands’ top restaurants. Everyone did better for the experience.
