The Environmental Health Division of the Victoria County Department of Public Health inspects places where food is served in Victoria, DeWitt, Jackson and Calhoun counties.

In the inspection reports, each infraction in priority elements 1 to 20 corresponds to 3 demerits; Priority Foundation items 21-33 are 2 demerits; and the base elements are 1 demerit. Zero is a perfect score, while 100 demerits is the worst possible score.

Every Wednesday, the lawyer publishes the inspection results of the previous week. All demerits are reported, but only priority and essential items are detailed.

FOOD SERVICE INSPECTIONS FOR THE WEEK ENDING August 17th.

Victoria’s kitchen, 3408 N. Lawrence Street, Victoria. Demerits: 38. Cooler and table top not containing 41 or less. Document food stored at room temperature. Throw away any food that has been in the fridge for more than 4 hours because it doesn’t contain 41 or less. Store raw chicken under other meats, cover items in cooler. Need an employee health and personal hygiene manual. Need to wash hands after touching mobile phone. Do not store utensils in the mop sink. Need certified food manager on duty, need body fluid cleanup kit. Flies. Label the date of the foods in the cooler. Need chlorine test strips. Need paper towels at the sinks. Do not use cardboard on surfaces. Store wet towels in a bucket of disinfectant. Store items on the floor. Shovels need handles. Need to close the screen to the window and seal the back door. Need soap in the toilet. Follow-up inspection on August 16. Ok to reopen.

Supermercados Morelos, 2211 Lone Tree Road, Victoria. Demerits: 34. Dairy refrigerator not containing 41 or less. The ice scooper handle was in the ice that will be served to customers, discard any cheese that has been in the cooler for more than four hours. Store raw chicken under other meats, cover items in the freezer. Need to wash, rinse, sanitize all dishes. Need to wash hands before using gloves. Need to label vaporizers. Need to fix the leak under the three compartment sink. Expired Certified Food Manager certificate. Flies. Do not store items in the sink. Do not use cardboard on surfaces. Employee drinks need a lid and a straw. Store wet towels in the bucket of disinfectant. Leak in the ceiling. Shovels need handles. Need to seal the hole in the bakery wall.

Casa Jalisco, 1706 N. Lawrence Street, Victoria. Demerits: 24. Cold room not containing 41 or less. Table top not containing 41 or less. Discard any food that has been in the cooler for more than four hours. Cover items in cold room, do not use non-food approved bags to store or cover food. Need to refill Body Fluid Cleansing Kit. Cold room not containing 41 or less. Need to work on food date labeling. Need to have thermometers in all fridges. Need paper towels handy in back area. Store wet towels in buckets of disinfectant. Do not store items directly on the freezer or cooler floor. All shovels need handles. Label items removed from original container. Replace missing floor tiles.

Primo Quik Stop, 1100 US 59 W., Ganado. Demerits: 22. Hot and cold are not readily available in a three-compartment sink., 0 ppm. Need a health and hygiene manual. The sink needs fixing. Need a certified food manager on duty at all times. Need labels on ice packs. Need an allergen label on the menu. No soap or paper towels at the sink. The hood needs to be cleaned. Rat droppings. Repair the kitchen floor. Clean and repair kitchen wall. Repair ceiling tiles in ice maker area.

Jack in the Box No. 4764, 1510 E. Rio Grande, Victoria. Demerits: 15. Colder reading above 41 degrees Fahrenheit. Keep time/temperature documentation on items at room temperature. Improper hand and glove washing procedure. Certified food manager not on site. Need food handler certifications. Employees need a cap or hair net in the food preparation area. Certified food manager position visible to the public.

Nacho Mexican Restaurant, 3810 N. Navarro Street, Victoria. Demerits: 14. Documenting when food is held at room temperature. Discard any food that has been in the cooler for more than 7 days. Throw the ice that has been in contact with the employee drink into the ice maker. Don’t store food directly in thank you bags, don’t store tortillas directly on napkins. Need to work on date labeling. Fix the area around the sink, do not use cardboard on the surfaces. Employee drinks need a lid and a straw.

Rodney -N- Cindy BBQ, Mobile Unit, Victoria. Demerits: 10. Need for an employee health and hygiene policy. Need a water sample. Need a certified food manager. Need food handlers.

Buffalo Wild Wings No. 232, 7905 N. Navarro Street, Victoria. Demerits: 9. Product must remain at 41 degrees when stored in a cooler. Insufficient temperature at the bar and in the kitchen dishwasher. Need to call as needed. Store the product above the ground. Replace the ceiling tiles in the kitchen.

Los Reyes Mexican Grills, 3801 N. Navarro Street, Victoria. Demerits: 9. Colder reading above 41 degrees Fahrenheit. Date label of prepared items. All surfaces should be easily cleanable/non-absorbent. Label items outside of original container. Close the dumpster lid.

Rodney-N-Cindy BBQ (Storage), 1319 Sam Houston Drive, Victoria. Demerits: 9. The two-door cooler is not at the correct temperature. Need an employee health and personal hygiene policy. Need a certified food manager. Need handler certificates. Improper use of the mop sink.

Memorial Stadium Concession, 1110 Sam Houston Drive, Victoria. Demerits: 7. Need a sink out front to prepare food. All easily cleanable non-absorbent surfaces. Need a three compartment sink. Need to caulk the doors.

Sichuan Garden Restaurant, 2003 Red River Street, Victoria. Demerits: 7. Store the bucket of sanitizer 6 inches off the floor. Clean the ice machine. Store all food containers 6 inches off the floor. Need soap, paper towels and a covered trash can in the toilet.

Marble slab creamery, 6362 N. Navarro Street, Victoria. Demerits: 5. The Certified Food Manager certificate has expired. Clean the fan. Post the last inspection.

Salvation Army, 1302 N. Louis Street, Victoria. Demerits: 5. Improperly stored raw meat. Expired food handler certifications.

Casa Jalisco, 1706 N. Lawrence Street, Victoria. inspected August 16 with 24 demerits. Re-inspected August 17, running temperature was ok. Keep working on other violations.

Hilton Garden Inn Victoria, 123 Huvar Street, Victoria. Inspected August 10 with 7 demerits. Reinspected August 15, all violations corrected.

I JUMP, 7606 Zac Lentz Drive, Victoria. Inspected August 10 with 5 demerits. Reinspected August 11 and violation resolved.

Mi Ranchito Restaurant, 1602 N. Ben Wilson Street, Victoria. Inspected August 2 with 14 demerits. Reinspected Aug 15, continue to work on violations.
